Amy’s Meatloaf

This is a very different version from what I usually make, but it came out very well. It was made for a friend going through some hard times and came out very good from what I heard from herself and her family.

2 lbs ground mild Italian sausage
3 lbs ground beef
8 oz chopped onion
1 tsp fresh thyme leaves
1 Tb minced garlic (or garlic in a tube, if available)
1 Tb Italian herbs (from tube or dried)
1 Tb Worcestershire sauce
1-1/2 cup Italian breadcrumbs (Progresso or Vigo)
1 tsp sea or kosher salt
1 tsp black pepper
1/2 tsp dried red pepper flakes
1/2 cup milk
1 jar Classico sauce (Florentine Spinach and Cheese was used)

Preheat oven to 375.

Add all ingredients, except for sauce, to a large mixing bowl. Mix well until blended.

Form into an egg-shape into a 13″ x 9″ baking casserole dish. Bake one hour on middle rack.

Remove from oven once browned well.

Pour sauce over meat, covering completely. Bake an additional 30 minutes, or until juices are clear.
