Ritz Crusted Baked Cod

2 lbs cod filets, or any white fish of choice
1 package Ritz crackers
Juice of one lemon
1/2 stick butter
1 Tb olive oil
2 tsp Old Bay seasoning
1 Tb fresh dill leaves, pulled from stems

Preheat oven to 375.

Add crackers to a zip-lock bag. Crush with rolling pin.

Melt butter and put in small bowl with lemon juice, Old Bay and fresh dill. Stir to blend.

Add crushed cracker crumbs to butter and spice mix.

Place fish filets in a baking dish. Spoon crumb mixture over the top of each filet and spread over each. Pat in well.

Bake 30 minutes on medium oven rack. Switch heat to boil and toast 2-3 minutes, watching closely, to crisp topping.

Remove from oven and let rest 5-10 minutes. Place filets on plate or platter. Serve with choice of sides.
