Onion Crusted Salmon
So simple to make! The spices were an after-thought in the process. It had so much flavor and delicious.
3 nice size salmon filets, rinsed and patted dry
Cooking spray (I use PAM)
1-28 oz container of French’s Original Dried Onions
1/2 stick butter, melted
1/2 tsp Old Bay Seasoning
2 Tb garlic powder, or to taste
1 tsp coarsely ground black pepper, or to taste
Preheat oven to 375.
Melt half stick butter in microwave in a small bowl on low until soft. I did it on power level 3 in 3-4 25 second intervals. You can also do it on low heat stovetop. Remove and add Old Bay Seasoning.
Put the dried onions into a zip-lock bag and seal. With a rolling pin, roll over to crush them into crumbs.
Add crushed onions to butter and Old Bay mix. Stir to blend well.
In a baking dish sprayed with cooking spray, arrange salmon filets, skin-side down. Sprinkle garlic powder over each filet. Divide onion mixture over each filet evenly. Pat mix into each filet to spread evenly. Sprinkle with black pepper.
Bake on middle rack of preheated oven for 35-40 minutes. When the salmon looks solid throughout, turn on broiler and broil for 3-4 minutes, watching closely so it does not burn. This will crisp up the topping as well as make the fish that much more tender and flavorful.
