SALMON PATTIES
INGREDIENTS:
4 cans salmon (if you have smoked salmon off a smoker, half a slab is close to two cans), spines removed
4 packs saltine crackers
4 eggs, beaten
1 onion diced
Zest and juice of one lemon
2 tsp Liquid smoke (only if using canned salmon)
1 tsp. Old Bay Seasoning
1 tsp. dill
Mix all ingredients well and form into patties. I usually let it set up in the refrigerator for an hour before making patties.Heat about a cup or so vegetable or canola oil in a cast iron skillet on medium-high heat until heat. Fry patties (I do four or five at a time) for 5-7 minutes on each side or until nice and brown.
Drain on plate with paper towels. Makes about 16 patties.
