Southern Pecan Cobbler

My hubs loves pecan cobbler! I mean he would eat it every day if I would make it for him! I found a recipe for Pecan Cobbler, showed it to him and as a result, I have been hounded for days to make it. Here is my version of our Southern Pecan Cobbler – it was delish!

PS – It really stinks when you can’t taste anything or have a piece of anything with sugar, let alone corn syrup! But I will do anything to make my boys happy!

Ingredients

2 refrigerated pie crusts, softened as directed on box
2 1⁄2 cups light corn syrup
2 1⁄2 cups packed brown sugar
1⁄2 cup butter, melted
4 1⁄2 teaspoons vanilla
6 eggs, slightly beaten
1-2 cups coarsely chopped pecans (Unless you LOVE pecans, use 1 cup)
Butter-flavored cooking spray
2 cups pecan halves

Directions

  1. Heat oven to 425°F. Grease 13×9-inch (3-quart) glass baking dish with the cooking spray. Remove 1 pie crust from pouch; unroll on work surface. Roll into 13×9-inch rectangle. Place crust in dish; trim edges to fit. This is your bottom crust…no one will see it…so fill in spots that you tore with your fingers with the trimmed off crust dough.pecan 4.jpg
  2. In large bowl, stir corn syrup, brown sugar, butter, vanilla and eggs with wire whisk. Stir in chopped pecans. Spoon half of filling into crust-lined dish. Remove second pie crust from pouch; unroll on work surface. Roll into 13×9-inch rectangle. Place crust over filling; trim edges to fit. Use the same technique as above adding extra crust dough to fill in holes. Spray crust with butter-flavor cooking spray. (it may not look very pretty, but O does it cook up nicely! pecan 1.jpg
  3. Bake 14 to 16 minutes or until browned. Reduce oven temperature to 350°F. Take out cobbler and carefully spoon remaining filling over baked pastry and arrange the pecan halves on top in a decorative fashion. pecan 3
  4. Bake 30 minutes longer or until set. Cool 20 minutes on cooling rack (if your family will allow it).pecan 2.jpg
  5. Cut into squares and serve with Vanilla Ice cream. Garnish with Caramel or honey and vanilla beans. Ya’ll Enjoy!!pecan cobbler.jpg
