Creole Shrimp Stuffed Cornbread
This was one I have been wanting to try and was unsure how or if it would even work. It did and how well it did! It is spicy, so if you do not like spicy, feel free to cut down on the red pepper flakes and creole spice. If you love spicy food, like myself, you will love this! We hope you enjoy!
INGREDIENTS:
1-1/2 cups all-purpose flour
1-1/2 cups yellow cornmeal
1 Tb sugar
4 heaping teaspoons baking powder
1 Tb dried red pepper flakes, divided
2 Tb creole seasoning (I prefer Konriko’s), divided
1 14.75 oz. can creamed corn
2 cups shredded medium cheddar
4 eggs
1 small can diced green chilies
8 oz chopped trinity (green pepper, onion and celery mixed)
2 cans Rotel diced tomatoes with green chilies
1/2 lb medium shrimp, peeled, deveined and chopped
1 Tb black pepper
2 Tb butter, divided
In a large mixing bowl, combine cornmeal, flour, baking powder, sugar, 1-1/2 Tb dried red pepper flakes and 1 Tb creole seasoning. Mix well.
To the dry ingredients, add corn, green chilies, eggs and cheese.
Mix well and set in refrigerator.
Chop shrimp into chunks and add the other Tb of creole seasoning, black pepper and 1/2 Tb dried red pepper flakes. Mix well and set aside in refrigerator.
Over medium low heat, melt 1 Tb of butter in skillet. Add trinity and adjust temperature to medium.
Sauté until transparent, about 5 minutes.
Add both cans of Rotel tomatoes and mix well. Simmer for 10 minutes or until mix is mushy.
Add shrimp and mix well. Cook just until shrimp begin to turn pink, about 1-2 minutes.
Preheat oven to 350. Place other Tb of butter in a 10″ cast iron skillet and put in oven to melt. Once melted, swirl around in skillet to coat the bottom.
To the buttered skillet, add about 1/4 to 1/3 of the cornmeal mix, just enough to cover the bottom.
Add the shrimp mixture and spread evenly and gently overtop the first cornbread layer.
Add the remaining cornbread mix over the top of shrimp mix.
Bake in oven about 1 hour or until golden brown.
Remove from oven and let rest about 10 minutes.
