Bramy’s Pizza

This was a very delicious pizza. It was cooked in a 15″ cast iron skillet, but a cookie sheet or 16″ pizza stone would work just as well as long as they are oiled. As far as the toppings, feel free to add your own or subtract as fit. It was absolutely amazing! We hope y’all enjoy it!

Preheat oven to 425 F.

1 Lb mild Italian sausage, browned and crumbled
1 Lb pizza dough (or from scratch)
8 oz jar Italian sauce of choice (marinara, spaghetti, etc.)
6 oz pre-sliced pepperoni
2 lbs shredded mozzarella cheese, divided
1 red pepper, halved and sliced into 1/2″ chunks
1 yellow pepper, halved and sliced into 1/2″ chunks
1 small can sliced black olives
Flour, as needed
Olive oil, as needed
1 Tb ground Parmesan cheese (or to taste)
1 Tb ground Romano cheese (or to taste)
2 Tb pizza seasoning (recipe below)

Pizza Seasoning:
1.5 Tb dried organo
1 Tb dried basil
1 tsp dried rosemary
1.5 Tb dried onion flakes
1/2 tsp dried thyme
2 tsp dried red pepper flakes
1/2 tsp garlic powder

Press or roll out pizza dough onto a floured surface. Transfer to pan or skillet for cooking. If necessary, add olive oil to help spread dough out.

Add sauce over dough, leaving an edge around the dough.

Layer pepperoni slices, overlapping slightly, over sauce. This works well starting by making a vertical and horizontal cross, working edges around dough, then filling in the corners.

Top with half the mozzarella cheese. Spread evenly.

Top first layer of cheese with about 1 Tb prepared pizza seasoning.

Top with 1 Tb each grated Parmesan and Romano cheeses. Spread evenly.

Add browned, crumbled Italian sausage. Spread evenly.

Spread peppers, olives or toppings of choice over pie.

Top with remaining, divided, mozzarella cheese.

Bake in oven approximately 30-40 minutes, depending on the dish it is cooked in. Tent with foil if necessary halfway through. Check cheese and crust for desired consistency toward the end of cooking.
