Lemon Garlic Crusted Grouper with Vegetables
It has been a while since I have had grouper. I have been curious about preparing it in different ways. This came out delicious. I did not know how I would prepare it until I got to the market it was purchased at. Feel free to double this recipe. It was prepared for two. We hope you enjoy!
3/4 to 1 lb. grouper filet
3 oz prosciutto, sliced very thin
1 Tb olive oil
1/2 stick butter, divided
1 zucchini squash
1 yellow squash
3-4 oz fresh shiitake mushrooms
Juice of 1/2 lemon
1 tsp granulated garlic (garlic powder may be substituted)
1/2 cup sliced roasted red peppers
1/3 cup toasted bread crumbs
Sea salt and pepper to taste
Preheat oven to 350.
On two separate cutting surfaces, slice prosciutto and then vegetables.
Heat olive oil in skillet over medium heat.
Add prosciutto and stir just until slightly browned, about 5 minutes. Add vegetables and 2 Tb butter. Add pepper. Sauté until slightly soft. Remove from heat.
Melt 2 Tb butter. Add lemon juice.
In a small bowl, add bread crumbs and granulated garlic and mix well.
Pour melted butter into bread crumb mixture. Stir to combine.
On a separate plate, place grouper filets and pack both sides with breading.
Arrange breaded grouper filets over vegetables in skillet. Bake, uncovered, for 30 minutes. After 30 minutes, switch oven to broil for approximately 2 minutes, keeping watchful of browning. Turn off oven, remove from heat to rest 5-10 minutes or until flavors meld.
