Fried Corn with Black Beans and Tomatoes
I was trying to make an easy side without it being too much work tonight. I had frozen corn, a can of black beans, a can of Rotel tomatoes with green chilies and spices handy. Came out quite well and so easy. We hope you enjoy it!
2-3 Tb vegetable oil
1/2 stick butter
3 cups corn (frozen corn works)
1 14oz can black beans (rinsed drained in colander)
1 can Rotel tomatoes with green chilies (rinsed and drained in colander)
1 Tb dried oregano
1 tsp cumin
1 tsp chili powder
1 tsp black pepper
1 tsp sea salt
1 tsp garlic powder
Heat oil and butter in skillet over medium heat. Turn off heat for 5 minutes, then add corn. It will sizzle, but stir well and heat burner back to medium low. Add spices, beans and tomatoes. Mix well and simmer 5-10 minutes. Turn off heat and set skillet aside.
