Baked Fish with Vegetables in Parchment Paper
This was so easy and delicious! Catfish filets were used, but any fish would work as well. We hope you try it and enjoy it as much as we did. Feel free to substitute any vegetables you like.
2 yellow squash, sliced
1 zucchini squash, sliced
8 oz chopped green onion
8 oz whole, fresh okra
8 oz fresh asparagus, tips removed
1 bunch Italian parsley, 1/3 removed and chopped
5-6 sprigs fresh dill
4-5 fish filets of choice
1/2 stick butter, sliced into 8-10 pieces
Old Bay seasoning (to taste)
Garlic powder (to taste)
Sea salt (to taste)
Black pepper (to taste)
4-5 sheets parchment paper
Drizzles of olive oil (not pictured above, but good)
Tear off sheets of parchment paper in 2-foot sections. Fold in half to create a crease.
Arrange vegetables on one half of parchment, close to the crease.
Lay a fish filet over vegetables. Add two tabs of butter and spices to taste. Drizzle a bit of olive oil (approximately 1 tsp) over top.
Preheat oven to 350.
Fold parchment over fish and vegetables. Create a triangular seal on one end and continue to fold around open edges.
Place on cookie sheet, two at a time. Bake 25 minutes on medium rack. Remove from heat. Let rest and move parchment packages to plate. Repeat with remaining parchment packages. Open each parchment package onto a plate and serve.
