Marinated Top Sirloin and Vegetables
This is so easy and delicious! Just marinade the meat overnight. The rest is easy from there. We hope you enjoy it!
2.5 lbs top sirloin filets
3-4 oz Dale’s steak marinade
1 red pepper, sliced into thin strips
1 green pepper, sliced into thin strips
1 yellow pepper, sliced into thin strips
8 oz onion (1/2 or to taste), sliced into thin rings
1 Tb dried oregano, plus dashes
1 Tb ground black pepper, plus dashes
6 fresh Roma tomatoes, quartered
5 oz fresh baby spinach
2 14.5oz cans stewed tomatoes (I used Italian blend tonight, but any would work)
Preheat oven to 350.
In a medium bowl or zip-lock bag, marinate steaks in Dale’s marinade overnight, or at least 8 hours. Remove from marinade to plate and discard marinade.
Arrange sliced peppers, onion Roma tomatoes, 1 Tb pepper, 1 Tb dried oregano, and steaks in skillet. Mix well.
Layer baby spinach leaves and stewed tomatoes (undrained) over top. Add dashes of pepper and dried oregano.
Cover skillet with foil and bake 1-1/2 hours on middle rack of oven. Remove from heat and let rest 10 minutes.

would be nice to have an alternative to Dales marinade. Never heard of it so recipe is useless to me

Worcestershire sauce is very similar in taste. Both are very salty, so use in small amounts.
