Smoked Nova/Lox Salmon Quiche

This was so easy to prepare. 30 minutes or so, as long as you have all ingredients on hand. Very delicious. We hope you enjoy it!

1 Pillsbury pie crust, softened at room temperature for 10 minutes
3 eggs
8 oz regular cream (half and half or milk may be substituted)
1/2 bag 5 oz fresh baby spinach (or to taste)
8 oz chopped green onion (about 6 stalks)
2 oz shredded Havarti cheese (Monterey Jack, Gouda or white cheddar would work as well)
8 oz smoked wild nova salmon
1 Tb ground black pepper

Preheat oven to 350.

In a medium-sized mixing bowl, whisk eggs.

Add cream and whisk to blend. Add green onions to bowl.

Loosely chop spinach and add to bowl.

Grate cheese and add to bowl.

Remove salmon from packaging and slice crosswise and add to bowl.

Add 3/4 Tb (approximately) black pepper to ingredients. Mix all ingredients together and set aside for a few minutes.

Place 1 softened pie crust in pie pan. Crimp edges as desired.

Add mixture from bowl onto pie crust. Bake 50 minutes on middle rack of oven.

Remove from oven and let rest 10 minutes.
