Stuffed Chicken Breasts
This chicken recipe was so easy and delicious! We hope you enjoy it!
6 boneless skinless chicken breasts
4 oz pesto (Classico Pesto used)
1 Tb minced garlic
4-5 oz fresh spinach leaves
12 sticks white cheddar or mozzarella
12-18 thin slices black forest ham or ham of choice
1 stick butter
7 oz Italian style breadcrumbs
Preheat oven to 350.
In a zip lock bag, pound chicken until 1/4″ thickness. Move to plate and set aside.
In a small bowl, add pesto and garlic. Stir well.
One at a time, coat each breast in approximately 1 Tb pesto- garlic mix.
Place a layer of spinach over pesto.
Add 2-3 layers of ham.
Add two sticks cheese over top.
Roll up each breast and secure with toothpicks or skewers. Set aside.
Melt butter in medium bowl. Add breadcrumbs and stir well.
Place prepared chicken in a large cast iron skillet or baking dish and pack breading over each piece.
Bake 50 minutes on medium rack of oven. Switch oven to broil and cook an additional 2-3 minutes to toast top of breading.
