Curry Seasoned Chicken and Vegetables
3 Tb olive oil
2 Tb curry powder
1 tsp sea salt
1 Tb ground black pepper
Chicken pieces (4 thighs and 5 legs used in this recipe)
Fresh vegetables of choice (stir fry vegetables, carrots, spinach and Roma tomatoes used in this recipe)
1 32oz carton chicken broth
Basmati rice, prepared to package instructions
Preheat oven to 350.
In a small bowl, add oil and spices. Mix well. Dip chicken pieces in mixture and massage over each piece.
Place chicken pieces in roasting pan or casserole pan large enough to accommodate. Bake in oven, 20 minutes to release juices and spices. Remove pan from oven.
Prepare vegetables as needed. Pour broth over chicken pieces in pan.
Add all vegetables to pan.
Cover with foil and bake in 350 degree oven 80 minutes. Remove and let rest. Serve over prepared rice.
