Best Southern Cobbler
I love to pick wild Blueberries and Blueberries from bushes on the farm in the Spring. I will then freeze sliced Peaches and other fruits in the summer. I always freeze them in 2-3 cup amounts so they are ready for this fabulous and easy Southern Cobbler Recipe! It’s one of our favorites – hope it is yours too!
BEST SOUTHERN COBBLER
INGREDIENTS:
- 1/2 stick salted butter
- 1 cup self-rising flour
- 2 cups sugar, divided
- 1 cup milk
- 1 teaspoon lemon juice
- 2-3 cups fresh or thawed frozen peach slices, blackberries, blueberries, etc… (I used blackberries)
- 1 Tablespoon Vanilla Extract
- Ground cinnamon or nutmeg (optional)
DIRECTIONS:
Preheat oven to 350°.
In a bowl, add 1 cup sugar and lemon juice to fresh or thawed fruit and stir well. It will make its own syrup as you prepare the batter.
Slice butter and place it in the oven to barely melt in a 9- x 9-inch baking dish for 5-10 minutes. Watch it so it doesn’t over cook.
Combine in a large bowl the flour and 1 cup sugar; add milk and vanilla, stirring just until dry ingredients are moistened. Pour batter over butter (do not stir).
Carefully spoon the fruit over the batter evenly.
Bake at 350° for 45-55 minutes or until golden brown. Sprinkle extra sugar and cinnamon or nutmeg on top of crust after taking out of the oven. Serve warm.
