Shrimp Scampi
A very tasty scampi. We hope you try and enjoy it as much as we did.
1-2 lbs shrimp, peeled and deveined
1 Tb Old Bay seasoning
2-3 Tb chopped green onion
2-3 Tb chopped fresh parsley
1/4 stick butter
1 Tb olive oil
8 oz bottle clam juice
Juice of 1/2 lemon
2 tsp minced or chopped garlic
1 lb. thin spaghetti
Heat butter and olive oil in skillet over medium-low heat.
Add green onion and parsley. Sauté a minute or two.
In a bowl, mix shrimp with Old Bay seasoning and stir well.
Add shrimp to skillet and sauté until tails curl on shrimp and they look pink. Add garlic and mix in. Reduce heat to low.
Add clam juice.
Prepare pasta according to package directions. Drain in colander and add to scampi in skillet. Mix well and let rest 5-10 minutes. Serve up!
