Chicken Pasta Medley
This is a great and very easy meal for weeknights. We hope you enjoy it is much as my family did!
3 boneless skinless chicken breasts, cut into cubes
1/2 cup chopped onion
1/2 cup chopped tomato
1/2 cup chopped green pepper
2 Tb butter
1 Tb olive oil
2 cans chicken broth
2 cans cream of celery soup
1-1/2 Tb cracked (or ground) pepper (tri-color peppercorns used here)
1 tsp sea salt
1 box pasta of choice (spiral pasta in this recipe, but any will work)
Drizzle 1 Tb of olive oil in a large skillet. Brown cubed chicken pieces until cooked through.
Remove to a medium bowl and set aside.
Melt butter in same skillet. Add vegetables and sauté about 4-5 minutes on medium heat or until softened.
Add broth and soup to skillet. Add salt. Mix well. Add chicken back to skillet with pasta. Let simmer about 15-20 minutes or until pasta is soft. Top with cracked pepper.
