Prosciutto Wrapped Cod With Butter, Lemon and Pesto Sauce
2-3 lbs fresh cod filets
1/4 lb. prosciutto, thinly sliced
Old Bay seasoning to taste
1 stick butter
Juice and zest of 1 lemon
1 Tb Classico pesto
Preheat oven to 375.
Lightly coat each fish filet with Old Bay seasoning.
Wrap tops of each filet in prosciutto slices and place in cast iron skillet or baking dish.
Bake 30-35 minutes on medium rack in oven. Turn off bake and switch to broil. Broil for 2 minutes. Remove fish from heat. Prepare sauce.
Melt butter in a small skillet.
In a small bowl, zest and juice one lemon and add pesto. Add to melted butter in skillet and stir well.
Remove from heat and let set up 10 minutes.
Spoon sauce over fish and serve.
