Blackened Shrimp Salad
1/2 lb. medium shrimp, peeled, deveined and tails removed
1 Tb Seafood Blackening Spice (on this site)
1 Tb butter
3 Tb chopped green onion
2 Tb mayonnaise (Duke’s is always my choice)
Rinse prepared shrimp in colander and drain well. Add to medium bowl.
Add blackening spice to shrimp in bowl and massage through to mix in.
Heat a skillet over medium to high heat.
Add 1 Tb butter to skillet to melt. Add shrimp mixture. Sauté blackened shrimp until tails curl and cooked through.
Remove from heat.
Add shrimp to small mixing bowl with scrapings from skillet. Let cool.
Chop green onion and add to bowl.
Add mayonnaise. Mix well.
Put in refrigerator to rest. Serve on bread or as a salad over fresh greens.
