Pimento Cheese Spread and Cheeseball
This turned out to be one of the best-tasting things I have ever created. It was so bold in flavor and would be a huge success at any gathering. I hope you enjoy it as much as we did!
6 slices thick cut bacon (I used Cracker Barrel’s)
16 oz medium cheddar
8 oz sharp cheddar
8 oz cream cheese
8 oz sour cream
1 large jar (approximately 6 oz) chopped pimentos
1 Tb ground black pepper
1 tsp cayenne pepper
1 tsp sea salt
1 tsp onion powder
1 cup mayonnaise (I only use Duke’s)
1/3 cup chopped green onion
Lightly coat a large skillet with oil and turn heat to medium heat on stovetop. Add bacon.
Fry until very crisp. Drain onto paper towel lined plate. Let cool.
Chop into small pieces. Set aside.
Add cream cheese to bowl and let soften. Add sour cream. Blend both together.
Grate cheddars onto a plate. Add to bowl.
Once cheddars are added, add all other ingredients and mix well.
CHEESE BALL
Form a large ball with pimento salad and roll in 8 oz chopped pecans. Serve with crackers or raw vegetables.
Last tip: try not to eat it all at once! It is highly addictive!
