Seared Scallops with Garlic Horseradish Sauce
1 lb. fresh scallops
1 Tb blackening seasoning
2 Tb butter
1-2 Tb olive oil
GARLIC HORSERADISH SAUCE
2 Tb olive oil
2 tsp fresh chopped garlic
2 tsp chopped fresh basil
2 Tb horseradish sauce
In a bowl, combine scallops and blackening sauce and massage together thoroughly.
Heat cast iron skillet over medium high heat on grill or range. Add butter and oil. Add scallops and grill until cooked through, 5-7 minutes, turning occasionally.
Serve with steak and pasta if desired.
