Amy’s Green Beans
1-2 lbs fresh green beans, snapped and rinsed in colander
6 slices thick cut applewood smoked bacon
32 oz carton chicken broth
2 tsp minced garlic
1 Tb Italian seasoning
5 sprigs fresh thyme, bundled with cooking string
1 tsp sea salt
1 Tb black pepper
Cook bacon in a large skillet over medium heat. Remove to plate lined with paper towels. Keep bacon drippings. Turn off skillet. Let cool about 15 minutes. Add rinsed and drained green beans to bacon grease. Turn heat back up on burner to medium. Sauté beans just to slightly brown.
Add broth and spices. Stir and cook 10 minutes.
Break up bacon into pieces and add to skillet. Let simmer another 30 minutes or until beans are soft. Turn off heat and remove from burner.
