Fried Okra
Our grandmother, Neenie, used to fry yellow squash (recipe here on this site as well). I used her same breading for okra this evening and it was outstanding.
16 oz fresh okra
2 cups yellow cornmeal
1/4 cup flour
1 tsp sea salt
2-3 cups vegetable oil
Table salt to taste
Rinse okra in colander.
Slice, removing tops and tips (if desired).
Add cornmeal, flour and sea salt to a bag. Shake to mix.
Add cut okra to bag.
Shake to coat. Let sit so okra absorbs breading mixture, shaking on occasion, approximately 15 minutes.
Add enough oil to cover skillet 1/4 to 1/2 inches. Heat over medium heat.
Add breaded okra to skillet. Increase heat to medium-high. Fry okra, flipping with a spatula, for 10-15 minutes.
Remove to a plate lined with paper towels. Sprinkle with table salt.
