Country as Fried Corn, Tomatoes and Okra

Amy and I have been talking about foods we love! So here is one of my ALL TIME fav recipes that can be eaten as an Entrée or side dish: Country as Fried Corn, Tomatoes and Okra with Bacon and Onion! Cook it to the “first level” of doneness, but keep cooking for another 30-40 minutes and you will have the most ROBUST flavor – I love it so much!

INGREDIENTS

  • 1/2 Pound bacon slices, cooked and chopped
  • 1 med sweet onion, coarsely chopped
  • 1 bag frozen cut okra
  • 14.5 oz can crushed tomatoes, with juice
  • 1 bag frozen yellow sweet corn or 1 can yellow sweet corn
  • Tony Chachere’s Creole Seasoning or Cayenne pepper and salt to taste

DIRECTIONS

Cook bacon in a skillet on Medium. Drain and save drippings. In 2 tablespoons bacon drippings, saute onion with bacon until translucent.

Add okra and sauté til lightly browned. Drain corn and add to skillet. Add tomatoes with juice. This is how it will look – the colors of the veggies will be very bright!

Okra Precook[1]

Cook on medium heat, stirring occasionally for 20 minutes. Add water if necessary.Season to taste with the Cajun spice or salt and Cayenne pepper. You can serve it like this or cook it another 30-40 minutes and brown the veggies to where there is the most robust flavor! It will look like this:

In our house, the spicier the better! And the longer you “fry” it, the better the taste!
