Chicken and Dressing
Chicken pieces (I used 4 thighs and 5 drumsticks)
Kosher salt and pepper to taste (optional)
1/4 cup vegetable oil
1 stick butter
1 cup chopped onion
1 cup chopped celery
1 cup sliced baby bella mushrooms
1/2 tsp ground sage
1 tsp poultry seasoning
1 tsp dried rosemary
5 sprigs fresh thyme
1/2 tube Jimmy Dean regular sausage
32 oz carton chicken broth
1 bag Pepperidge Farm herb stuffing cubes
Preheat oven to 375.
Brown chicken pieces, several at a time.
Remove to plate and set aside. Let skillet cool and wipe clean.
Melt butter in skillet over low to medium heat. Add onion and celery. Sauté until semi-transparent.
Add mushrooms and all spices. Remove thyme sprigs from skillet once leaves cook off.
In another skillet, brown half the tube of sausage. Once browned, add to main mix in skillet.
Add broth to skillet. Stir and turn off heat.
Stir in stuffing. Season with poultry seasoning.
Top stuffing with chicken pieces. Bake in oven 1 hour or until chicken is browned.
Once chicken is cooked completely, switch to broil for 3-4 minutes or until browned and top crisped.
