Pistachio-crusted Salmon
2 large salmon filets, or 4-5 cut salmon pieces
4-5 oz shelled pistachios, chopped in processor or crushed in bag with rolling pin
1 cup Italian bread crumbs
1 Tb Old Bay seasoning
1/2 cup butter (1 stick or two half sticks)
Preheat oven to 350.
Puree pistachios in food processor, or have lots of patience and smash them in a freezer bag with a rolling pin. I personally suggest the processor. 😉
Add pureed pistachios to a medium mixing bowl.
Add breadcrumbs and Old Bay seasoning to pistachios in bowl. Mix well.
Melt butter (in microwave at 30 second intervals on power level 3).
Add butter to pistachio mixture. Mix well to blend.
Spray casserole dish with cooking spray or grease with oil and/or butter.
Pack the mixture onto salmon filets. Place in preheated oven on middle rack. Bake 30-35 minutes. Turn off oven and switch temp to broil on Hi. Broil 2-3 minutes or until top crust crisps and gets golden brown.
