Panko And Garlic Herb Chicken
This was a quick and easy recipe for in the week cooking. It has few ingredients and very little prep time. It came out very well.
3 boneless skinless chicken breasts, pounded thin
4 oz plain Panko breadcrumbs (1/2 box)
2 Tb Mrs. Dash Garlic & Herb seasoning
1 Tb ground black pepper
2 Tb fresh basil, chopped
1 stick butter (1/2 cup)
Preheat oven to 375.
Pound chicken breasts, one at a time, in a plastic zip-lock bag until 1/4″ thickness. Move to plate.
In a small mixing bowl, combine Panko, Mrs. Dash’s Garlic & Herb seasoning, and chopped basil. Mix well.
Place butter in a microwave safe cup or bowl. Melt in microwave in 30 second intervals on power level 3 or until completely melted (approximately 4 turns in microwave). If you prefer the stovetop, heat on low to medium heat in a small saucepan until melted.
Pour butter over Panko mixture. Stir to combine.
Spoon mixture over chicken and spread on both sides, packing and pressing into each piece, firmly. Place in oven on middle rack and bake 40 minutes.
Turn off baking element and switch to broil. Broil about 3-4 minutes or until top gets crispy and golden brown. Serve with choice of sides.
