Red Velvet Bundt Cake with Cream Cheese Filling
How do you make a really good cake? Don’t you have to use Cake Flour, Buttermilk, etc…..? Actually, bakeries use mixes to do large orders and add extra wonderful ingredients! Eggs always at room temperature (you can soak them in hot tap water) and mix the wet ingredients and dry ingredients separately then mix them slowly together. To make an airy cake, mix it an extra minute or two, a denser one, mix for 2 minutes.
Bundt Cake + Red Velvet + Cream Cheese Filling = Heaven! After several tries, I came up with a lovely and extremely tasty cake! Perfect for that special event or VALENTINE’S DAY BABY! Or make it just because it’s RED VELVET CAKE!
CAKE INGREDIENTS:
- 1 box Red Velvet cake mix – I used Duncan Hines
- 1/4 cup flour
- 1/4 cup granulated sugar
- ½ cup sour cream
- 3 T softened butter
- ½ cup water
- 3 whole eggs, at room temp
- 1 tablespoon vanilla extract
- OPTIONAL GARNISH – 1 cup chopped pecans; Red colored sugar; White Chocolate Chips
DIRECTIONS
Prep the Bundt Pan by spraying well with Pam Cooking spray. Preheat the oven to 325 degrees.
Whisk together the dry ingredients in one bowl. In a separate bowl, whisk the wet ingredients together.
In a large mixing bowl, slowly combine the two together while mixing at medium speed. Mix for 3 minutes on medium speed making sure to scrape the sides! A stand mixer works so well!

Spoon 2/3’s of the cake batter into the Bundt cake pan and smooth out.
Make the Cream cheese filling below.
Cream Cheese Filling Recipe
- 8 oz. package cream cheese, softened
- 1/4 cup butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 2 tablespoons all-purpose flour
- 1 teaspoon vanilla extract
Directions:
To easily soften cream cheese and butter, I cube them into a bowl and microwave in 15 second increments until the butter starts to melt.
In a separate mixing bowl, mix cream cheese, butter, and sugar at medium speed with an electric mixer until blended and smooth. Add egg, flour, and vanilla; mix on Medium speed until well blended.
Carefully spoon the cream cheese filling on top of the batter. Then spoon the remaining batter on top of that layer. See below.
Bake the cake for 50-55 minutes. Ovens may vary slightly, so use a toothpick to check to see if it’s done. When your toothpick comes out clean, the cake is done.
Let the cake sit in the pan for about 30 minutes before inverting onto a plate. Or if you’re in a hurry, place in the fridge!
Cream Cheese Frosting Recipe
- 8 oz. package cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups confectioners’ sugar
- 1 teaspoon vanilla extract
- 1/4 cup milk
Mix cream cheese and butter together in a medium bowl with an electric mixer. Add sugar, vanilla and milk. Mix well.
Allow the cake to cool for at least 45 minutes to an hour before adding frosting. Use a spoon to drizzle frosting over the cake. If the frosting isn’t easy to drizzle, heat it up in the microwave for 10 seconds. This will make it easier to work with.
Garnish with chopped pecans, red sugar or white chocolate chips! It’s a crowd pleaser!

Why do you need to add the additional sugar and flour to the mix? Couldn’t you make the recipe using the typical addition of pudding mix, which I frequently see used in cake mix bundt cake recipes? Just wondering…

Thanks for the question Krysia! I made it this way because of the filling added. I made it with the pudding mix, milk and extra eggs and it overflowed the pan and the filling did not set well! Talk about a mess! The pic and recipe you see here was the third try! I wanted the filling to be more “set” into the cake. Hope this helps and thanks for the questions! I am making a Chocolate Bundt today with the pudding and nor filling!

It came out fine using the pink velvet but it was gone before I could get any pictures of it .. I did add some candy hearts to the top for Valentine’s Day instead of nuts
