French Bread Pizza
French bread pizza is so easy and inexpensive. If you choose onions, peppers or other toppings, it helps to sauté them beforehand. I happened to use black olives and mushrooms tonight. Black olives do not need any sautéing, but the mushrooms did. Toasting the bread beforehand helps make it very crisp. I prefer Cuban bread over French bread because it is larger and crisps much better, but choose for yourself.
1 loaf Cuban or French bread
1 jar marinara sauce (of choice)
8 oz sliced baby portobello mushrooms
1/4 stick butter
Sliced pepperoni to taste
Shredded Mozzarella cheese to taste
Cooking spray (I prefer PAM)
1 small can sliced black olives
Preheat oven to 425.
Melt butter in a skillet. Add mushrooms.
Sauté mushrooms until soft. Set aside. Drain liquid from black olives. Set aside.
Cut loaf into sections and slice in half lengthwise. Place on cookie sheet lined with foil. Spray generously with cooking spray.
Bake in oven 4-5 minutes or until tops of bread are toasted. Remove from oven.
Top each bread half with marinara, cheese, other desired toppings. Layer cheese between as desired. Place in oven and bake 10 minutes or less, or until cheese is melted.
Remove from heat. Let rest about 5 minutes. Serve.
