Buttery Baked Corn on the Cob with a Kick

I used to boil corn on the cob and could take it or leave it until I started rolling it in foil and baking it. What a huge difference on flavor! The foil helps hold in the flavors of the butter and spices. If you want it kicked up an extra bit, add a half tsp of cayenne pepper or dried red pepper flakes. Very easy to make and can also be put on the grill as well.

4 ears fresh corn, shucked
1/2 stick butter, melted
1/2 tsp ground cumin
1/2 tsp chili powder
1 tsp garlic salt
1 tsp ground black pepper
1/2 tsp oregano

Preheat oven to 350.

Place four square sheets of aluminum foil in a stack. Add spices to melted butter and stir well.

Place each ear of corn on a piece of foil. Drizzle 1/4 of butter mixture over each and roll on foil to spread over each ear. Sprinkle with additional garlic salt, if desired.

Roll each ear of corn up and place in a baking dish. Bake or grill 45 minutes. Remove from oven or grill and let rest in foil 5-10 minutes. Unwrap from foil and serve.
