Baked Ranch-Breaded Chicken Breasts
The breading on this recipe is so easy and delicious. Although 1 stick of butter is shown, only 1/2 was used. This breading can work on anything, whether it is chicken thighs, drumsticks, bone-in breasts or leg quarters. Tonight, boneless skinless chicken breasts were used. This recipe involves using the broiler as well as baking. It is wonderful for crisping the outside crust, but holding the moisture of the meat. Just keep a close eye on it during the process. It may be used on pork chops as well. Simple and great on flavor!
3-4 boneless skinless chicken breasts
1/2 stick butter
1 Tb ground black pepper
1 packet Wishbone ranch seasoning packet
1 cup Progresso Italian-style breadcrumbs
Preheat oven to 400.
Place chicken breasts in a plastic storage bag. Pound with a meat mallet, one at a time.
Remove to plate and set aside.
Melt 1/2 stick butter. Add ranch seasoning packet, pepper and breadcrumbs.
Mix all ingredients well.
Place chicken in a large cast iron skillet or baking pan enough to accommodate. Pack breading over all sides of chicken, pressing firmly.
Bake 15 minutes per side on medium-low rack. Turn chicken halfway through. Turn off bake and switch to broil for 5 minutes, or until breading browns to desired consistency.
Remove from heat and let rest 5-10 minutes.
