Tortellini and Spinach in White Clam Sauce
Although the ingredients in the picture show only one can of Progresso white clam sauce, I actually used two cans in this recipe. I used Italian sausage stuffed tortellini, but any tortellini can be substituted as well.
1 20 oz package Buitoni tortellini (sweet Italian sausage stuffed was used tonight)
2 cans Progresso white clam sauce
6 oz fresh spinach
2 tsp dried Italian seasoning
Olive oil and salt to taste
Bring a large pot of water with olive oil and salt to boil. Chop spinach just into large pieces and add to a large mixing bowl.
Add tortellini to bowl with spinach. Once water comes to a strong boil, add spinach and tortellini to pot. Cook according to package directions on pasta. Drain into colander.
In pot that was used to cook spinach and tortellini, add both cans of white clam sauce.
Add drained spinach and tortellini into sauce. Mix well. Heat to a slight boil. Reduce heat and simmer for a few minutes. Turn off burner and remove from heat.
Top with Parmesan cheese if desired.
