Roasted Asparagus with Garlic and Roasted Red Peppers
2 packages fresh asparagus, tips cut off
2 large roasted red peppers from jar of red peppers, sliced into thin strips
1 Tb garlic, minced
1 tsp sea salt or kosher salt
1 Tb ground black pepper
3 Tb olive oil
Preheat oven to 400 degrees.
Slice ends off asparagus and add to a large cast iron skillet or baking dish. Slice peppers into thin strips.
Add to skillet or baking dish with garlic, salt and pepper. Pour olive oil over all and mix thoroughly.
Place in oven and roast 30 minutes, stirring halfway through, or until desired consistency.
