Baked Blackened Fish
This fantastic seafood blackening spice from The Spice and Tea Exchange (www.spiceandtea.com) tastes amazing. I used this combination on catfish tonight, but can be used on any fish or shrimp. I highly recommend their spices. I served this with roasted asparagus and tortellini in white clam sauce (both recipes posted on blog).
6 catfish filets, or any white fish of choice
1 oz packet blackening spice
1/2 stick butter
1/4 cup olive oil plus 1 Tb olive oil
Preheat oven to 375 degrees.
Melt butter. Add 1/4 cup olive oil and blackening spice. Mix well.
Cover a cookie sheet with aluminum foil. Pour 1 Tb olive oil over foil and spread out, using a paper towel, to distribute over surface. Arrange fish on cookie sheet.
Spoon blackening mixture over each fish filet thoroughly until coated.
Bake in oven 15 minutes on medium rack. Switch oven to broil and cook 2-3 minutes, watching closely, until top is slightly browned.
