Easy Bacon and Pea Salad

My Aunt Helen, Amy’s mom, made this salad. My mom, Ann, loved it so much, she got the recipe from her and makes it especially in the summer. I saw a pea salad similar to this recipe and thought I would make this easy and delicious salad for my Hubs. I called my mom and asked her where in the family it came from – she said Aunt Helen!!! So how cool is that? I have been making this for years and had no idea it wasn’t my mom’s original – I love my family!!!

INGREDIENTS

1 pound of bacon, cooked according to package instructions, drained and crumbled or finely chopped

1 Head Iceberg Lettuce

2 cans Le Sueur Baby Young Peas, drained – the secret to this great salad

1 cup coarsely grated sharp Cheddar cheese

1 medium sweet onion, peeled, and finely chopped

3/4 cup of mayonnaise – we use Duke’s

Salt and Pepper to taste

INSTRUCTIONS

Core and clean Iceberg Lettuce. Drain all water off and shred into 2 inch pieces in a large bowl. Add drained peas, bacon, cheddar cheese, onion and mayonnaise. Mix well and then salt and pepper to taste. Cover and store in the refrigerator.
