Onion Crusted Pork Tenderloin
This was invented today. It was absolutely mouth-watering, between the crispy outside and the juicy, tender inside. Very pleased with the outcome.
1 stick butter, melted
1 Tb Italian seasoning (prefer the tubes, if available)
1 packet dry onion soup mix (Lipton was used tonight)
1 cup Italian-style bread crumbs
1 pork tenderloin (the one used was in two sections), rinsed and patted dry with paper towels.
Preheat oven to 350.
In a small mixing bowl, mix melted butter, Italian seasoning and soup packet.
Add bread crumbs and mix well.
Place tenderloins in a baking dish. Cover with bread crumb mixture on all sides.
Bake 35-40 minutes. Change oven setting to broil and cook 3 minutes longer or until coating gets crisp.
Remove from oven and rest 5-10 minutes.
