Frittata
I have made this once before, but expanded on it tonight. Olive oil and butter was added during browning as well as what is in the ingredient picture. It was extremely delicious!
1 Tb olive oil
12 oz (5 links) spinach and feta chicken sausage, or smoked sausage of choice.
8 oz baby bella mushrooms, sliced
1/2 stick butter
8 oz chopped onion
8 oz tri-pepper mix (red, green and yellow), chopped
12 oz frozen chopped spinach, thawed in colander
8 oz cream Havarti cheese (or cheese of choice), shredded
18 eggs, beaten
8 oz milk or cream
1/2 tsp salt
1 tsp ground black pepper
Slice sausage links.
In a large skillet (cast iron tonight), heat olive oil over medium-low heat. Add sausage and brown slightly.
Add mushrooms and sauté 5-10 minutes. Add 1/2 stick butter. Mix well, then add peppers and onion.
Squeeze water out of spinach in colander and add to skillet. Mix well and turn off burner. Remove from heat and let cool about 10 minutes.
Preheat oven to 350.
Shred cheese and set aside.
Break eggs into large bowl. Add cream and blend. Add salt and pepper. Stir well.
Pour egg mixture into skillet. Add cheese. Stir well until blended.
Bake in oven on middle rack 40-45 minutes or until top starts to brown some. Remove from heat and let rest 5-10 minutes.
