Cowboy Caviar

This is a recipe I made up many years ago and was a great covered dish or healthy side dish.

2 15 oz cans black beans
1 15 oz can whole kernel corn
1 10 oz can Rotel diced tomatoes with green chilies.
1 15.5 oz can canellini beans
1 15.5 oz can chick peas
1 15.8 oz can black eye peas
8 oz green onions, sliced thin
1/4 cup fresh parsley, chopped
1/4 cup apple cider vinegar
1/2 cup olive oil
2 tsp hot sauce (Frank’s used here)
1 Tb dried oregano
1/2 tsp salt
1 tsp ground black pepper

Rinse all beans and corn in a colander in sink. Let drain a few minutes. Add to a large bowl. Open Rotel tomatoes and drain, slightly. Add green onions and parsley.

In a measuring cup, mix Vinegar, olive oil, hot sauce, oregano, salt and pepper. Stir well and pour over bean mixture.

Mix well with large spoon, cover and let chill in refrigerator a few hours.
