German Smashed Potato Pancakes or Fritters
I just made German Potato Pancakes from leftover potatoes for the Blog and I can’t quit crying. My Dad died 29 years ago and I still have a moment occasionally when I am so reminded of him. Food uses all of our senses and it floods us with wonderful memories when we taste these old recipes. Thank-you Dad for making those delicious pancakes so I can feel the love once more……and thank-you to my wonderful Cousin on helping to bring back these wonderful memories with me!
INGREDIENTS:
1 1/2 cups – 2 cups leftover smashed potatoes
2 tablespoons milk
1 egg
1/2 teaspoon salt
1 dash black pepper
1/4 cup flour
1/4 cup cooking oil or 4 Tablespoons Butter 
DIRECTIONS Start heating a large skillet with the oil or butter. I love the way the butter browns it and makes it tastes even more fabulous.
In a large bowl, mash the cold potatoes with a fork until soft. Add the milk; mix well. Add the egg, salt, pepper and flour; mix until well blended.
Shape into patties. In a large skillet, fry the patties in oil or butter until golden brown on both sides. Ya’ll Enjoy!!!
