Roasted Vegetables

6 oz thin asparagus spears
6 oz snow pea pods
12 oz baby portobello mushrooms, sliced
1/2 cup thinly sliced carrots
6-8 small yellow, red or orange peppers combined and sliced into lengthwise strips
5 Roma tomatoes, sliced lengthwise into 8 strips each
1 onion, quartered and sliced
3 Tb olive oil
1 Tb Badia Sazon Tropical seasoning (available in the ethnic isle of many grocery stores)
1/2 tsp kosher salt, or to taste
1/2 tsp oregano, or to taste
1/2 tsp ground black pepper, or to taste

Preheat oven to 375.

In a large broiler pan, combine all above ingredients. Drizzle with olive oil and spices. Roast 30-40 minutes on middle rack, stirring occasionally to blend.

Serve with Spanish Yellow Rice (also on this site).
