BEST CHEAP AND EASY CHICKEN AND DUMPLINGS

One of the easiest, cheap and tasty dishes I have ever made!

1 crockpot
1 gallon water
4-5 pound whole fryer chicken
Wax Paper
Sea Salt
Pepper
3-4 cups Self-rising flour

Take the chicken out of the wrappings and take out any “innards” inside the chicken – such as the liver, heart or gizzards. (You can freeze them as use them as a gravy base or fish bait!) Wash the chicken thoroughly, making sure you use proper sanitary procedures.

Put the chicken in the crockpot and slowly pour the water over the chicken. Add a teaspoon of salt and pepper. You can also add other spices such as Poultry Seasoning or Tony Chachere’s Cajun Seasoning.

Set the crockpot on low 8 hours (if you work) or 4 hours (high). You can even cook it overnight and place in the fridge in the morning and then make your dumplings in the afternoon to serve at Suppertime.

Remove the chicken and strain the fabulous chicken stock. Carefully pour the stock into a large stockpot. Remove the skin off the chicken and carefully remove the chicken meat. Shred and place in the stock. Bring stock to a rolling boil – this is part of the secret to this recipe.

NOW is the fun part! Using a large piece of wax paper, take 1 &1/2 cups of flour and make a little mountain on your paper. Then make a hole in the top of it – should look like a Volcano. Take 1/2 cup of broth (while it is hot) and pour it into the top of the “flour volcano.” Mix together carefully and then knead until a stiff dough. Add more flour to keep it from sticking. Or you can just mix it in a bowl – but let’s have fun!

Roll dough out on wax paper to 1/4 inch thickness. Cut 1-2 inch wide dumplings. Add them to the boiling stock. For the picture example, I added dumplings three times. Reduce heat to Low. Make sure to stir as the dumplings will stick. As it all thickens, take the pot off of the heat, cover it and let it stand for 10-15 minutes! Season to taste – I add a ton of Sea Salt and Pepper! FUN, Cheap and EASY!
