Blackened Cobia
This blackening spice was acquired from a wonderful spice shop, The Spice and Tea Exchange, Orlando, Sarasota as well as other locations in Florida (https://www.spiceandtea.com/florida-winter-park-orlando-area-ezp-16.html).
1.5 lb. filet Cobia filet or other dense, white fish (grouper or similar consistency would work well)
2 Tb blackening seasoning from above mentioned spice shop (or blackening seasoning of choice)
1/4 cup vegetable oil
Preheat oven to 375.
On a plate, pat blackening spice into both sides of fish.
In a large skillet (I prefer cast iron), heat oil over medium heat on stovetop. Once smoke begins to appear off oil and skillet, add fish filet. Cook approximately 3 minutes on each side, or until black on both sides. Put skillet in oven and bake 10 minutes or until fish flakes off nicely. I had an extra thick filet of fish, so it required extra heat.
Remove from oven and let rest.
