Vegetable and Salami Salad

I have made this recipe with frozen green beans as well. They may be added as well to this. If you do, just defrost them in a colander. Another option would be to add sliced raw yellow squash or zucchini. It is very versatile.

SALAD
1 yellow pepper, sliced into strips
1 red pepper, sliced into strips
1 green pepper, sliced into strips
1 red onion, halved and sliced into strips
8 Roma (or plumb) tomatoes, quartered lengthwise
2 cucumbers, quartered lengthwise and sliced thin
1/2 hard salami, sliced and then sliced, and each slice cut into strips

DRESSING
1 Tb Dijon mustard (I use Grey Poupon)
1 Tb white wine vinegar
1/2 cup olive oil
1 Tb Italian seasoning
Sea salt or kosher salt and pepper to taste

Combine all vegetables and salami into a large bowl. Prepare dressing and pour over contents in bowl. Mix well and refrigerate at least one hour.
