Chicken Wings
I have found several recipes for wings. Some only require 30-35 minutes baking, but I prefer a crispier skin on the wings. Boiling, then baking at 450, then searing in a skillet helped.
50-75 wings (more or less, depending on how many you feel like making)
2 Tb kosher salt
SAUCE
8 Tb hot sauce (I used Texas Pete)
1 stick butter
1-1/2 Tb white vinegar
1/2 tsp cayenne pepper
1/2 tsp garlic powder
1/2 tsp Worcestershire sauce
Preheat oven to 450.
Bring a large pot of salted water to a hard boil. Add wings and boil 15-20 minutes. Drain in colander and let rest.
In a saucepan, combine sauce ingredients and heat until butter is melted. Place wings on a cookie sheet with a rack or directly on cookie sheet. Bake for 45 minutes. Brush wings with sauce. Bake 5-10 minutes more. Remove from oven, turn wings and brush other side with sauce. Bake 10 minutes. Remove from oven. If skin is still soft, sear in skillet over medium heat for a few minutes.
Drizzle with leftover sauce and serve.
