Baked Marinated Salmon

2 1b pieces wild or Alaskan salmon
1/3 cup honey
1 Tb Dijon mustard (I use Grey Poupon)
2 Tb white wine vinegar
1 Tb Italian seasoning
3/4 cup extra virgin olive oil (EVOO)
1/2 tsp garlic salt
1/2 tsp pepper

Preheat oven to 375.

Mix all ingredients, other than salmon, garlic salt and pepper, into a bowl. In a Zip Lock bag or casserole, combine salmon to mix and marinate for about 45 minutes.

Put about 1 Tb EVOO in skillet or baking dish. Put it oven to heat skillet and oil. Remove skillet from oven and place salmon pieces, skin-side down, in skillet. Drizzle leftover marinade over salmon. Add garlic salt and pepper over salmon.

Bake 30 minutes. Remove and let rest 5-10 minutes.
