Leftover Turkey and Stuffing Pot Pie
2 cups leftover stuffing (I used my sausage stuffing recipe from this site)
2 cups leftover turkey meat, chopped
2-3 cups turkey gravy
1 bag frozen mixed vegetables, thawed in colander
2 frozen pie crusts, set out at room temperature to thaw (I use Pillsbury)
1/4 stick butter, melted
Salt and pepper to taste
Preheat oven to 350.
In a large mixing bowl, mix turkey, stuffing, gravy and vegetables. Place and press one pie crust in pie pan. Add turkey and stuffing mixture. Top with other pie crust. Crimp edges, slice four slits in the top crust and bake for 45 minutes. Remove from oven, brush with butter. Sprinkle with some salt and pepper and bake another 15 minutes or until golden brown. Remove from oven and let rest 10 minutes.
