Pinto Beans with Ham and Bacon
1 bag dried pinto beans
1 32 oz carton chicken broth
1 Tb dried cumin
1 Tb chili powder
1 Tb garlic powder
1 Tb oregano
6 slices thick-cut applewood smoked bacon, cooked and crumbled
1 ham bone with meat
Rinse beans thoroughly in a colander. Put into large pot and add broth, ham bone and spices. Fill the pot with enough water to cover beans about 4-5 inches. Bring to boil, then reduce heat to simmer for a good 3 hours or until beans start to break open and get soft. If beans soak up a lot of the water, add more to pot. Remove bone and let cool. Pull any ham pieces off bone and chop. Put ham pieces back in pot and add crumbled bacon. Let simmer another hour or so.
