Best and Easy Momma Ks Buttermilk Biscuits
My little, petite Momma, affectionately known as Momma K, is one of the best Southern cooks around! Everything she makes is from scratch and is cooked slow and lovely. Over the years, I have called her 100s of times for cooking advice and recipes! This is the first thing she taught me to make from scratch besides Sweet Tea – Southern Staples! She is one of my biggest fans and my most appreciated critic. I love her with all of my heart and nothing reminds me more of home than the wonderful aroma that is produced by these fabulous and EASY biscuits! With just 4 ingredients, I am sure you will be making these instead of buying that can or frozen bag! Ya’ll Enjoy!
Ingredients:
2 & 1/2 cups self-rising flour
Pinch of Salt
1/2 cup butter (1 stick)
1 cup buttermilk (whole, if you can find it)
1 T melted butter
OPTIONAL: 1/4 teaspoon Baking Soda – will make the dough rise more
Directions:
Preheat an oven to 450 degrees. I use the “bread” setting on mine.
Sift flour (and baking soda, if you are using it) in a very large bowl. If you use a large bowl, it is easier to cut up the butter. Slice the butter into very thing slices and then cut in the butter with a couple of butter knives or pastry blender until mixture resembles coarse crumbs.
Make a well in the center of the mixture and stir in the buttermilk until a soft ball forms. Turn the dough out onto a lightly floured surface and lightly kneed 3-4 times. THIS IS THE MOST IMPORTANT STEP – PLEASE DON’T OVER KNEED IT! You want to make a somewhat smooth dough, but it will not rise very much. Carefully pat or roll dough out to a 1-inch-thick circle.
Cut biscuits out with a biscuit cutter or a pint mason jar and transfer to a baking pan or stone. Lightly brush on melted butter. BEWARE: If you do not have any edges on your pan, the butter will make a mess. You can skip this step, but it makes the tops lovely. Reference the below pics of how they should look.
Bake in the preheated oven until tops are light brown and the sides begin to darken, about 10-14 minutes depending on your oven. Start watching them at 10 minutes. Remove biscuits to cool completely on a wire rack.
