Oven Baked Fajitas
Ingredients:
2 lb boneless, skinless chicken breasts or steak, cut into strips or large, deveined, shelled shrimp
4 Tbsp vegetable oil
4 tsp chili powder
3 tsp cumin
2 tsp garlic powder
1-2 tsp cilantro
1/2 tsp seasoned salt
1 (15 oz) can diced tomatoes with green chilies (Rotel)
2 medium onions, sliced and cut into strips
1 red bell pepper, cut into strips
2 green bell peppers, cut into strips
Directions:
Preheat the oven to 400 degrees. Place meat in a 13×9 baking dish. If using shrimp, it can be sautéed over Medium heat in a skillet with 1 teaspoon of EVOO until lightly pink and curled.
In a large measuring cup, combine the oil, chili powder, cumin, garlic powder, cilantro, and salt. Drizzle the spice mixture over the meat and stir to coat. Next add the tomatoes, peppers, and onions to the dish and stir to combine.
Bake uncovered for 30 minutes or until meat is cooked through and the vegetables are done. If cooking shrimp, add sautéed shrimp to the mixture during the last 5 minutes of cooking. Either serve over Spanish Rice or in Tortilla Shells.
