SOUTHERN BANANA PUDDING

YEEHAW!!! We reached OVER 100 Likes today so here are the two versions of Banana Pudding that everyone loves! Decide if you like lots of gooey pudding or extra cookies like the Hubs does! You can easily add more pudding or more cookies to make it even more special!THE OLD FASHIONED WAY:
1 cup sugar
3 eggs, beaten
1 dash salt
2 tablespoons cornstarch
2 cups milk
1 teaspoon vanilla
3 -4 ripe bananas, sliced thin and dipped in lemon juice
2 boxes vanilla wafersMix sugar and eggs together. Add salt, cornstarch, and milk. Bring to a boil over medium-high heat, stirring constantly; cook until thickened. Remove from heat; add vanilla and mix well.In serving bowl or 13 x 9 glass baking dish, layer the wafers, bananas, and the pudding. Next cover with the Meringue!3 egg whites
1/2 teaspoon vanilla
1/4 teaspoon cream of tartar
6 tablespoons sugarPrepare meringue: In large mixing bowl combine egg whites, vanilla and cream of tartar. Beat with mixer on medium speed until soft peaks form. Gradually add 6 tablespoons sugar, beating the meringue until stiff and glossy peaks form and all the sugar is dissolved.

Lightly spread over the pudding making sure to seal all sides and bake at 350 degrees until the peaks turn brown, approximately 10 minutes.

QUICKER VERSION!
Here is what Susan’s Hubs Cam calls BANANA PUDDING CRACK Truly the secret ingredient is the Caramel!!!4 cups COLD milk
1/2 cup sour cream
(2) 5-ounce boxes instant French vanilla pudding
6-8 bananas, sliced and dipped in lemon juice
(2) boxes Vanilla wafers, save some cookies for garnish
12 oz frozen whipped topping, THAWED
Caramel topping (in the Ice Cream topping area)
Optional Toppings: Pecans, Cherries, Banana Slices, Crushed CookiesIn a lovely dish (clear glass Truffle or 13 x 9 baking dish), cover the bottom with a layer of cookies. In a large bowl, mix the pudding INTO the milk, mix on medium for 2 minutes, then stir in the sour cream. Put it in the fridge to set while you are slice the bananas.In a truffle bowl or 13″ x 9″ baking dish, start layering: cookies, bananas then pudding over that layer. Repeat layers until you have a couple of inches to slap on the whipped topping. Then the BEST part – take the caramel sauce and pour cute squiggles on the top and then scatter crushed cookies, pecans, cherries or just leave it plain with the caramel – it’s that good!!!! You can even right Happy Birthday or Banana Pudding Crack on it LOLMake this and you will have Marriage Proposals Whether you want them or not!
